Good call on the Amy's on Guadalupe! One of the first that comes to mind.

There's a place called Ritter's, which I believe has become a vaguely expansive chain after starting in Indiana, that is really excellent: www.ritters.com. They're in the Midwest and have been moving south. The quality is really quite good.

Home of the Goog special - an upside down (very thick) blueberry milkshake with a hot fudge and banana sundae on top (peanuts optional). There are many other equally special treats. Uses only real ice cream and not ice milk

Any of the numerous Abbott's locations in the Rocherter, NY area. The absolute best!

Dr. Mike's is excellent. They also have a satellite store in Monroe/Stepney Connecticut right off of Rte 25 (Bridgeport-Danbury highway)

Carvel

Perhaps it is because of the memories of eating the soft ice cream from this ice cream chain when I was a boy growing up in Brooklyn, but Carvel ice cream is in its own class. The Flying Saucers, shakes and ice cream cakes are just a few of the frozen ice cream treats which Carvel offers that are also worthy of a try. It may not be the richest or creamiest ice cream. It may not even be the best ice cream. However, the ice cream is made fresh at every Carvel location. I am sure happy to learn of its ongoing nationwide expansion of franchises, because I surely enjoy Carvel ice cream.

I typically enjoy soft Chocolate ice cream with chocolate sprinkles in a sugar cone.

Bonus: For as long as I can remember, Wednesday is Sunday at every participating Carvel ice cream store. This means that when you buy one sundae, you receive one sundae free!

FYI, Amy has several locations around Austin, not just the one on Guadalupe. One of them, perfect for your trip or layover, is located airside in the Austin airport. Apparently they can even pack up your treats to go in containers designed to keep cool for up to 8 hours of travel.

Here's a big ^ ^ ^ to Carl's. Top notch custard! This was just one of the great things about going to visit my brother when he went to Mary Washington College.

I'm a little surprised the Kopp's in and around Milwaukee didn't get any mention, nor did a place in and around Buffalo whose name escapes me at the moment.

I was also a big fan of Sprinkle's when I lived in Palm Beach, FL, and my latest ice cream addiction has been Cold Stone Creamery, located in various parts of the U.S. (and a recent addition to my town of White Plains, NY).

They've got Amy's in a bunch of places around Texas now. I know we've got at least one here in Houston -- the one I know is right across the street from the 59 Diner at Shepherd and U.S. 59. (Mmmmmmmm ... 59 Diner ... speaking of great ice cream ... their milkshakes and malts are killer. But I digress.)

Moorestown was just voted best city in the country by Money magazine. It is indeed a nice little Jersey town, though growing by leaps and bounds. Farmland is giving way to shopping malls and houses, but it is still fairly local and friendly. Dolce Crema is straight from Italy. They had about 40-50 flavors, ranging from a fantastic pistachio (my favorite) to a powerful rum raisin (gf's favorite). The only one I didn't like so much was the key lime which was tart enough to knock my socks off and curl my toes. The place reminds me of a large gelateria in Vienna. It's famous but I forget the name. Worth the trip if you live in the general vicinity.
