Best of luck with both the move and the new job! It sounds exciting and it seems like you really feel good about your decision. Those smaller companies that are really trying to succeed can be exhilarating to work for - just make sure you leave yourself enough leisure time!

If I were cooking for other people, it would be to perfection.
For myself, I prefer well-done food...

That being the case, didn't you have a problem with the steaks in EZE??
Everything I read or have heard says that the "grill Nazis" at the steak houses down there decide how they're going to cook your steak, not you.
And they all prefer screamin' a$$ blood rare.
Now I can handle medium or even medium rare in a pinch but rare, cold, purple steaks are not my bag.

The steaks were not only incredible, they were the best I have ever eaten.
At the very worst, they were prepared medium-well.
