Israel is next on my list of places to visit. I have a good friend who visits family in Israel often, and she says it is just a beautiful country. This history throughout the Middle East, and in Israel in particular, is just awesome, and I can't wait to see it someday.

Jordan can range from very hot (in Aqaba) to very cold (in Amman) on the very same day. Indeed there are people snorkeling in the south while it is is snowing in the capital.
I know the problem you are facing -- I am about to go to Fort Lauderdale in a few days and from there will be heading for two weeks in northern Italy and Switzerland, so I have to pack for summer and winter.
Making it worse is the fact that if you have a stopover in Europe (as opposed to simply connecting there) your baggage allowance drops sharply. Instead of being allow the two pc (50 pounds each) that is permitted on the trans-Atlantic segments you will only be allowed a total of 44 pounds for the Europe-MidEast segments, and be charged very heavily for overweight.
