There's at least one electronics shop - around international concourse E, I think - that definitely had iPods on display. I'm not sure how good their stock would be, though.

There is no official apple store in the airport. As Rampo mentions, there are various electronic stores and duty free stores in the airport which sell Apple products. However, I don't think that the prices are anything special and probably more than what you would pay elsewhere.

The duty free electronic shops in BKK are way overpriced. Much higher prices than in the city.

I was there last week, and considered buying the iPad 2 there. The duty free shop in BKK (two locations) sells the iPad 2 for the exact same prices as the iStudio stores (an Apple Premium Reseller) (25900 BHT for 3G/64GB model, or about $870 USD). They didn't have all models in stock.
I found that the iStudio stores never had any left in stock by evening, but that there were plenty for sale on the unofficial market at the electronics stands at most major shopping areas. Not worth taking the risk at those places, though, and not really worth the bargaining effort to pay more than you would pay from a premium reseller.
Gave up in the end and decided to order from US.
