Also such a missed opportunity to do some kind of Rice-A-Roni dish, or heck, even slap a sourdough roll on any recycled menu item and dub it SF ...

LOL, I was being serious, but we are talking UA, and having them drop a cold hard sourdough roll would be them

Does anyone know / have experience of the IAD signature dish yet? I'm flying IAD-SEA next month and am curious

Many of you know I only like white (breast) meat.
The similar (I think) item served in ORD C UC is definitely thigh pieces (yuck)! I want to avoid if same on board!
DW had it yesterday. She thought it the best meal she had on a flight in memory. Its a chicken breast.

I don't believe there are signature dishes yet for the IAD, DEN, and LAX hubs.

Coming soon. (link to my blog)

Jenny Jackson, United’s Hospitality & Planning Director, said:

“As we build on United’s mission of connecting people and uniting the world, I’m thrilled that we’re starting to introduce regional dishes that celebrate our hub cities and are reflective of the communities we serve. We will continue to introduce these dishes across all seven of our hubs over the coming months, and rotate offerings so that they stay fresh and relevant for our guests.”

But it won't be.
I'm not finding the connection between Spanish Tapas and Newwark Signature dish. The Newwark signature dish sounds like something you would get in any steak house.

So my next question to Ms.Jackson, how did you come up with the regional dishes, one would assume you would highlight each region with a known dish.

My guess as someone who is not from the Northeast, is that steakhouses are sort of synonymous with NY and thus EWR is UA's NY hub.

As to the Spanish Tapas, I am have no idea.

UA has said that all hubs will have a signature dish by the end of the year. With just 3 more hubs to go, unsure if it will take another 3 months or if it will be rolled out earlier.
