More choices for onboard menu items

Just flew Broome/Perth, (2hrs 45mins), sitting about half way down the 737. On the one and only run of cabin service, no toasties, sandwiches or wraps left, not even any crackers and cheese. I was told I could purchase crisps or twists.
Very poor offering..
Where’s the balance between what the PR spin and the menu offers with a reasonable level of onboard availability?
